One still for the brown spirits
Rum and whisky need volume. The larger the batch, the calmer the run and the more even the spirit that then spends years in the cask. With the new still we distil in one run what used to take several.
It stands in the open in the distillery. On the tour you stand right in front of it.

Construction
From bottom to top
01PotThe copper pot holds 4,000 litres of wash. An agitator stops anything catching on the bottom.
02HelmetThe rising vapours collect here. The copper binds unwanted sulphur compounds along the way.
03Rectifying columnPlates with sight glasses, each switchable. The more plates, the purer and lighter the spirit. All of them for vodka, few for whisky.
04DephlegmatorA cooler at the top of the column that lets heavy fractions flow back. This is how the distiller steers the character.
05CondenserCools the vapour into liquid spirit. At the spout the distiller cuts heads, heart and tails.
